Tree-ripened cashew apples are collected after they fall naturally, then crushed to extract juice. This juice ferments naturally in earthen pots for several days without added yeast or nutrients. The fermented liquid undergoes triple distillation to produce feni, which contains approximately 43-45% alcohol by volume. In 2009, cashew feni received geographical indication registration, recognizing it as a specialty alcoholic beverage unique to Goa.
Apong: The traditional rice beer
Apong is a traditional alcoholic beverage of Northeast India, particularly consumed by the Mising community of Assam and various Tani tribes of Arunachal Pradesh. This rice-based fermented drink plays a central role in cultural ceremonies, festivals, and daily life.
The preparation involves cooking rice and mixing it with E’pob, a starter culture made from rice flour and medicinal plants. Two main varieties exist: Nogin Apong, made from regular rice for everyday consumption, and Po:ro Apong, made with sticky rice and ash from burnt paddy husks, reserved for special occasions. The fermentation process takes 5-6 days in summer, with the alcohol content reaching 18-25%. Women exclusively prepare this beverage, passing down the knowledge through generations.
Cereal-based fermented foods
Idli and dosa: South Indian staples
Idli and dosa represent India’s most popular fermented breakfast foods, originating from South India and now consumed worldwide. Both products use the same batter, made from rice and black gram lentils, but are prepared differently-idli is steamed while dosa is pan-fried into a crisp crepe.
Research identifies Leuconostoc mesenteroides as the predominant microorganism responsible for both souring and gas production in idli fermentation. This heterofermentative lactic acid bacterium produces carbon dioxide that causes the batter to rise, creating idli’s characteristic soft, spongy texture. Additional bacteria including Enterococcus faecalis and Pediococcus cerevisiae contribute during later fermentation stages.
The fermentation process, typically lasting 8-12 hours overnight at room temperature, significantly enhances nutritional value. B vitamins increase, protein digestibility improves, and the glycemic index moderates through acid production. These factors make idli and dosa nutritionally superior to unfermented alternatives.
Bhatura: The leavened bread
Bhatura is a deep-fried leavened bread from North India, traditionally served with chickpea curry. The dough combines refined wheat flour with yogurt or a fermented starter called khatta. Lactobacillus species in the yogurt or starter culture ferment the dough, producing organic acids and carbon dioxide. This fermentation creates the characteristic tangy flavor and helps the bread puff up dramatically when deep-fried, resulting in a light, fluffy texture.

Hentak: Manipur’s fermented condiment
Hentak is a traditional fermented fish product from Manipur in Northeast India. Small fish are sun-dried, powdered, and mixed with dried petioles of the aroid plant Alocasia macrorhiza to create a thick paste. This mixture ferments in earthen pots for approximately one week.
The fermentation involves multiple lactic acid bacteria species, including Lactobacillus lactis, Lactobacillus plantarum, Lactobacillus fructosus, and Lactobacillus amylophilus. These bacteria produce antimicrobial compounds that preserve the product while developing its characteristic pungent flavor. Hentak serves as both a condiment and a cooking ingredient, often prepared as curry or side dishes with rice.
Kargyong: Himalayan fermented sausage
Kargyong is a traditional sausage-like product from Sikkim and Darjeeling, consumed by ethnic groups including the Bhutia, Tibetan, Sherpa, and Lepcha communities. Three varieties exist: yak kargyong, lang kargyong (beef), and faak kargyong (pork).
The preparation involves finely chopping meat and fat, mixing with garlic, ginger, and salt, then stuffing the mixture into natural casings made from animal intestines. After boiling for 20-30 minutes, the sausages are hung above kitchen ovens for smoking and drying for 10-15 days. Studies identify various Lactobacillus species including Lactobacillus sake, Lactobacillus curvatus, and Lactiplantibacillus plantarum as the dominant fermentation bacteria. These microorganisms produce lactic acid that lowers pH, inhibits pathogenic bacteria, and develops the product’s distinctive tangy flavor.

The knowledge of traditional preparation methods risks disappearing as fewer people learn these skills. Preserving these foods means maintaining cultural heritage while providing access to their significant health benefits.
Food scientists and anthropologists now work to document traditional fermentation methods before they vanish. This documentation helps maintain cultural diversity while allowing scientific study of the beneficial microorganisms involved. Some traditional products have gained geographical indication protection, recognizing their cultural importance and unique regional character.
