What makes proteins essential?
Proteins are complex molecules built from smaller units called amino acids. There are twenty different amino acids, and nine of these are considered “essential” because our bodies cannot produce them-we must obtain them through food. According to research published in Frontiers in Nutrition, proteins serve multiple functions: they maintain the structure of living cells, support immune function, assist in enzyme production, and provide essential nutrients that affect everything from muscle development to brain health.
The quality of protein depends largely on its amino acid composition and digestibility. As noted by Harvard’s Nutrition Source, proteins from animal sources tend to be “complete,” containing all essential amino acids in adequate proportions, while most plant proteins are “incomplete,” lacking one or more essential amino acids. However, this doesn’t make plant proteins inferior-it simply means we need to consume a variety of them.

Plant-based proteins dominate the global protein supply, contributing approximately 57% of dietary protein worldwide. These sources include cereals, legumes, nuts, seeds, and pseudocereals, each offering unique nutritional profiles.
Cereals: the staple protein providers
Cereals like wheat, rice, maize, barley, millet, and sorghum form the foundation of human diets across the globe. Research indicates that the protein content of cereal grains ranges between 7% and 18% of dry matter, depending on the species and variety. Wheat and rice serve as primary staple foods in India and many developing countries, providing not just calories but also significant protein.
On a worldwide scale, about 70% of protein available for human consumption comes from plant sources, with cereals contributing more than 70% of this amount. Wheat, along with rice and maize, accounts for nearly one-third of global cereal protein production. However, cereal proteins are typically low in lysine, which means they benefit from being combined with other protein sources.
Rice, despite its relatively low protein content, is considered a high-quality protein source due to its superior amino acid composition among cereals. It also offers the advantage of being gluten-free and hypoallergenic, making it suitable for individuals with certain dietary restrictions.
Legumes: protein powerhouses
Legumes-including soybeans, chickpeas, lentils, peas, and various beans-are excellent protein sources, particularly for vegetarian and vegan diets. Common beans are considered the primary source of vegetable protein in developing countries, while soybean has been the most extensively studied plant protein due to its complete amino acid profile.
Chickpeas serve as a major dietary protein source offering high-quality protein, and peas can be utilized in various food formulations to improve human protein intake. Legumes are also rich in fiber, vitamins, and minerals, making them nutritionally valuable beyond their protein content. However, they tend to be lower in sulfur-containing amino acids like methionine and cysteine, which is why combining them with cereals creates a more complete protein profile.
Nuts, seeds, and pseudocereals
Nuts and seeds, including almonds, peanuts, flaxseeds, chia seeds, sunflower seeds, and pumpkin seeds, provide both protein and healthy fats. Flaxseed is one of the richest sources of high-quality protein among seeds, also containing phenolic compounds and essential fatty acids.
Pseudocereals like quinoa, amaranth, and buckwheat have gained attention for their nutritional profiles. These foods contain high-quality protein with good amounts of essential amino acids, including lysine-which is typically lacking in true cereals. They’re also gluten-free, making them suitable for individuals with celiac disease.
Animal sources of protein
Animal-sourced foods such as meats, poultry, eggs, milk, and fish are nutrient-dense foods rich in protein, essential amino acids, and micronutrients. These proteins are generally highly digestible and contain all essential amino acids in proportions suitable for human needs.
Meat and poultry
Generally, meats consist of about 20% protein, along with varying amounts of fat and water. Beef, pork, lamb, chicken, and turkey provide high-quality protein along with important nutrients like iron, zinc, phosphorus, potassium, and B vitamins. Liver, in particular, is exceptionally rich in vitamin A, riboflavin, and folic acid.
Lean meats such as chicken, turkey, beef, and pork are excellent sources of high-quality protein as well as important nutrients like iron and zinc. For health-conscious consumers, choosing lean or low-fat options such as skinless chicken breast or lean ground beef helps minimize saturated fat intake while still obtaining protein benefits.
Fish and seafood
Fish provides protein ranging from 13% to 20% of muscle tissue, with fat content varying considerably between species. Fish like cod and haddock concentrate their fat in the liver, resulting in extremely lean muscle tissue, while salmon and herring may contain 15% fat or more. Beyond protein, many fish species provide omega-3 fatty acids, which are beneficial for heart and brain health.
Eggs and dairy products
Eggs have a well-deserved reputation as an excellent protein source. The egg white contains protein, while the yolk is rich in both protein and vitamin A, along with calcium and iron. Eggs contain all essential amino acids, making them a complete protein source that’s also versatile in cooking applications.
Dairy products-milk, cheese, and yogurt-provide protein along with calcium and other essential nutrients. The animal protein market is dominated by dairy proteins, accounting for approximately 50% of the market share, followed by egg proteins at about 40%. Greek yogurt, in particular, offers high protein content along with probiotics that support digestive health.
Microbial sources of protein
Beyond plants and animals, microorganisms represent an emerging and sustainable protein source. Microbial protein qualifies as an excellent source of nutritive proteins, meeting FAO/WHO requirements for essential amino acid patterns suitable for human nutrition.
Algae
Algae have supported human populations living near the sea for millennia, providing a constant source of protein and vitamins. Spirulina, a blue-green algae, has gained popularity as a dietary supplement due to its complete protein content and rich nutrient profile, including B vitamins, iron, and antioxidants.
Fungi and yeast
Fungal proteins, particularly mycoprotein (marketed as Quorn), have become commercially successful meat alternatives. These proteins are produced through fermentation technology to create fibrous textures resembling meat. Fungal proteins are particularly favored due to their chemical composition and amino acid profiles, meeting standards set by the FAO for human nutrition.
Yeast, especially Saccharomyces cerevisiae, has been used as a protein source since World War I, when it was cultivated on molasses for human consumption. Today, various yeast species continue to be explored for their potential as sustainable protein sources.
Bacteria
Bacteria possess advantageous traits for protein production, including rapid growth, short generation times, and the ability to thrive on diverse raw materials. Single-cell proteins derived from bacteria can contain 60% to 82% protein on a dry matter basis, along with amino acids that are often lacking in plant or animal sources.
The advantage of microbial protein production lies in its efficiency: microorganisms produce protein much more efficiently than farm animals or plants, with doubling times measured in hours rather than months or years. This makes them attractive options for addressing future protein demands sustainably.
Combining protein sources for optimal nutrition
The concept of protein complementation involves combining different protein sources to create a complete amino acid profile. Since cereals are typically low in lysine while legumes lack sufficient methionine and cysteine, eating them together provides all essential amino acids. Traditional food combinations like rice with lentils, wheat bread with peanut butter, or corn tortillas with beans reflect this principle.
Modern nutrition science suggests that these complementary proteins don’t need to be consumed at the same meal-eating a variety of protein sources throughout the day generally ensures adequate amino acid intake. This is particularly relevant for individuals following plant-based diets.
The future of protein sources
As global population grows and environmental concerns increase, the search for sustainable protein sources continues. Plant-based proteins are steadily gaining popularity due to their lower environmental footprint, while microbial proteins offer promising solutions for producing nutritious food with minimal resource use. Animal proteins remain important, particularly for populations vulnerable to undernutrition, but shifting toward more sustainable production methods is becoming essential.
