Metal cans: the time-tested guardian of preserved foods
Metal cans represent one of the oldest and most reliable forms of modern food packaging. Dating back to the early 19th century, metal cans have evolved significantly while maintaining their core purpose: providing exceptional protection against light, moisture, and microorganisms.
Today’s metal cans are typically made from aluminum or steel (tinplate), each offering distinct advantages. Aluminum cans are lightweight, highly recyclable, and excellent for beverages, while tinplate cans provide superior strength for products requiring thermal processing. The hermetic sealing capability of metal cans creates one of the most reliable barriers against oxygen-a primary cause of food deterioration.
Common applications of metal cans
Metal cans excel at preserving foods requiring long shelf life. Tinplate cans are predominantly used for fish, chicken, beef, vegetables, sauces, and soups, while aluminum cans dominate the beverage sector for carbonated drinks, energy drinks, and beer. Ready-to-eat meals, preserved fruits, and vegetables maintain their nutritional value for extended periods when properly canned.
The ability of metal cans to withstand high processing temperatures makes them essential for commercial sterilization methods. However, internal coatings called lacquers are applied to prevent interaction between the metal and acidic food contents-particularly important for products like tomatoes and fruit cocktails.
Glass bottles and jars: transparency meets preservation
Glass packaging has been used for centuries and continues to hold a special place in food packaging, particularly for premium products. Made from silica, soda ash, and limestone, glass containers provide an inert packaging medium that doesn’t interact with the food product inside.
The key advantages of glass include its chemical inertness-meaning it won’t leach compounds into food-and transparency, which allows consumers to see the product before purchase. This visibility factor makes glass particularly attractive for premium items where visual appeal drives purchasing decisions.
Where glass packaging shines
Glass bottles and jars are commonly used for premium beverages including juices and alcoholic drinks, condiments such as jams and pickles, baby foods, and certain dairy products. Glass is considered one of the safest materials for long-term storage due to its chemical stability and the fact that it’s 100% recyclable without any loss in quality.
However, glass does have limitations. Its weight increases transportation costs, and fragility can lead to breakage during handling. Despite these challenges, glass remains irreplaceable for certain food categories where product visibility and premium positioning are essential-think artisanal sauces, specialty oils, and gourmet preserves.
Flexible packaging: the modern convenience revolution
Flexible packaging represents one of the fastest-growing segments in food packaging today. This category encompasses a wide range of materials including plastic films, aluminum foil, paper, or combinations of these materials laminated together to create pouches, sachets, and wraps.
Stand-up pouches and flexible pouches
Stand-up pouches and zip lock bags are increasingly gaining popularity due to their convenient, easy-to-transport design that allows manufacturers to extend product shelf life. These pouches can range from simple single-layer plastic bags to sophisticated multi-layer structures incorporating different barrier properties.
Flexible pouches offer excellent product-to-package weight ratio, significantly reducing transportation costs and environmental impact. They’re particularly popular for snacks, frozen foods, coffee, pet food, and single-serve items. The ability to incorporate resealable zippers, clear windows for product visibility, and high-quality printing makes them attractive to both manufacturers and consumers.
Retort pouches: the can alternative
Retort pouches are multilayered, flexible, and hermetically sealed pouches that typically consist of an outer PET layer for strength, a middle aluminum foil layer for barrier properties, and an inner polypropylene layer for heat sealing. These specialized pouches can withstand sterilization processes, making them viable alternatives to cans for ready-to-eat meals.
The major advantages of retort pouches over traditional cans include comparable barrier properties at lower thickness, faster heating during processing, and easier disposal since they can be flattened.
Stretch-wrap and vacuum packaging
Stretch-wrap films serve an essential role in protecting food products during storage and transportation. Made primarily from polyethylene, these films cling to products and pallets, providing protection against dust, moisture, and tampering.
Vacuum packaging takes protection a step further by removing air from around the product before sealing. This technique significantly extends shelf life for items like cheese, processed meats, and coffee by minimizing oxidation and inhibiting bacterial growth. The tight seal created by vacuum packaging also helps maintain product texture and prevents freezer burn in frozen products.
Bag-in-box: efficient liquid dispensing
Bag-in-box (BiB) packaging consists of a strong bladder, usually made of several layers of metallized film or plastics, seated inside a corrugated fiberboard box. This system was invented by American chemist William R. Scholle in 1955 and has since become widely used across the food and beverage industry.
Key applications and advantages
Bag-in-box packaging excels in several applications. It’s commonly used for supplying syrup to soft drink fountains, dispensing bulk condiments like ketchup and mustard in foodservice operations, and packaging boxed wine for retail consumers. The system is also extensively used for dairy products, fruit juices, and liquid egg products.
The main advantage of BiB packaging for products like wine is that it prevents oxidation during dispensing. Rather than allowing air to enter as with conventional bottles, the bladder uses gravity pressure to squeeze liquid out without air exposure. This design means that opened products remain fresh significantly longer than their bottled counterparts.
BiB packaging reduces the carbon footprint by eight times compared to glass bottles, and over 75% of the corrugated cardboard used is fully recyclable, renewable, and biodegradable.
Paperboard containers: sustainable versatility
Paper and paperboard encompass 31% of the global packaging market and are among the most widely used materials for food packaging. These materials offer excellent sustainability credentials while providing adequate protection for many food products.
Types and applications
Paperboard containers come in various forms designed for specific applications. Paper and paperboard are used for ice-cream cups, microwave popcorn bags, baking paper, milk cartons, fast food containers, and beverage cups. Folding cartons are particularly popular as secondary packaging for wholesale transportation of multipacks.
For liquid foods, paperboard-based liquid packaging dates back to 1915 with innovations like Pure-Pakยฎ milk cartons. Modern beverage cartons, such as those from Tetra Pakยฎ, consist of multiple layers including polyethylene, paper, and sometimes aluminum foil, providing excellent barrier properties for milk, juice, and other beverages.
Paperboard materials deliver excellent performance, transportation durability, and enhanced shelf presence, making them suitable for food, beverage, foodservice, and other consumer goods applications. Coated versions offer improved resistance to moisture and grease, expanding their utility to a wider range of food products.
Selecting the right packaging form
The choice of packaging form ultimately depends on balancing multiple factors. Product characteristics play a primary role-acidic products may require glass or specially coated metal, while dry goods work well in paperboard. Shelf life requirements influence whether hermetic sealing is necessary. Distribution conditions determine if the package must withstand temperature extremes or rough handling.
Consumer convenience increasingly drives packaging decisions. Resealable features, portion control, ease of opening, and microwave compatibility all influence modern packaging choices. Meanwhile, sustainability concerns push manufacturers toward recyclable, biodegradable, or reduced-material options.
Cost considerations-including material, processing, transportation, and storage costs-round out the decision-making process. While premium products may justify glass packaging, mass-market items often benefit from the cost efficiency of flexible pouches or metal cans.
