However, their mobile or temporary nature presents unique hygiene challenges that require specialized attention to ensure food safety.

The structure itself must facilitate proper hygiene practices. Food contact surfaces should be constructed from non-corrosive, non-rusting materials that are smooth, waterproof, and easily cleanable. Overhead protection is essential when food is prepared or portioned on-site, preventing airborne contamination from environmental elements.
