The role of Codex Alimentarius in setting traceability standards
The Codex Alimentarius, or “Food Code,” is a collection of international standards, guidelines, and codes of practice to protect consumer health and ensure fair practices in food trade. Currently, the Codex Alimentarius Commission comprises 188 Member Countries, one Member Organization (the European Union), and more than 230 Observers.

Over six decades, Codex has established more than 4,400 maximum usage levels for food additives, more than 6,600 maximum residue levels for agricultural pesticides and veterinary drugs, and numerous other standards that support traceability implementation. These standards are based on the best available scientific and technical knowledge, ensuring their credibility and effectiveness.
How traceability identifies and manages risks
Effective traceability systems operate as early warning systems for food safety issues. By maintaining detailed records at each stage of the supply chain, businesses can quickly identify when and where problems occur. This capability transforms reactive crisis management into proactive risk prevention.
The system works through what’s known as the “one step back-one step forward” approach. This means each business operator can identify the supplier from which a product was received and the customer to whom it was supplied. This creates an unbroken chain of documentation throughout the supply chain.
