Facility design and sanitation
The physical environment where food is produced must be designed and maintained to prevent contamination. Sanitation is not a one-time activity but an ongoing commitment. All food-contact surfaces must be cleaned as frequently as necessary to prevent allergen cross-contact and microbial contamination. This includes establishing written sanitation procedures, maintaining equipment in cleanable condition, and ensuring cleaning compounds themselves don’t become sources of contamination. Non-food-contact surfaces also require regular cleaning to prevent the buildup of dirt or debris that could harbor pests or indirectly contaminate food products.
Equipment verification and maintenance
Equipment used in food manufacturing must be designed from appropriate materials, maintained in good working order, and regularly verified to function as intended. This goes beyond simple repairs-it requires a systematic approach to preventive maintenance and calibration.
Food-contact surfaces must be constructed from materials that won’t leach harmful substances into products and designed to be easily cleanable without hard-to-reach crevices where food particles could accumulate. Equipment validation involves three key phases: Installation Qualification to verify proper setup, Operational Qualification to confirm performance within manufacturer specifications, and Performance Qualification to demonstrate consistent results under actual production conditions. Instruments used for measuring critical parameters like temperature, pH, and water activity must be accurate, properly maintained, and adequate in number for their intended uses.
Process validation and control
Manufacturing processes must be validated to ensure they consistently produce safe products that meet predetermined specifications. This means documenting each manufacturing step with detailed written procedures that include equipment settings, process parameters, and quality checkpoints.
Process validation is particularly important for critical control points that directly affect product safety, such as cooking temperatures for pathogen elimination or pH levels for acid foods. Manufacturers collect and analyze data from multiple production runs to demonstrate that processes achieve desired results under normal operating conditions. In-process controls establish checkpoints during production to identify and correct deviations before they affect finished products, and line clearance procedures ensure production areas are free from materials from previous operations before starting new batches.
Documentation and record-keeping
Comprehensive documentation forms the backbone of GMP compliance. Records provide evidence that procedures are followed correctly and create a traceable history of each product batch.
