Salmonellosis, caused by Salmonella bacteria, stands as one of the most common and preventable foodborne illnesses worldwide. Understanding how this infection spreads and how to prevent it is essential for anyone who handles or prepares food.

What is Salmonellosis?
Salmonellosis is a bacterial disease that affects the intestinal tract. The bacteria responsible for this infection typically live in the intestines of both animals and humans, spreading through contaminated food, water, or direct contact with infected sources.
While scientists have identified over 2,500 different types of Salmonella bacteria, fewer than 100 types cause most human illnesses. The infection doesn’t discriminate, though certain groups face higher risks of severe complications.
How Salmonella spreads
The primary transmission route for Salmonella is through contaminated food. Raw meat, poultry, eggs, unpasteurized milk, and even fresh produce can harbor these bacteria. The challenge is that contaminated food typically looks, tastes, and smells completely normal, making it impossible to detect without proper safety measures.
Common sources of contamination
Animal products: Salmonella naturally exists in the intestines of many animals. During slaughtering and processing, bacteria from intestines can contaminate meat and poultry. More than 1 in every 25 packages of chicken at grocery stores contains Salmonella.
Eggs: Bacteria can contaminate eggs in two ways. They may be present on the shell when the chicken lays the egg, or they can form inside the egg before the shell develops. While fewer egg-laying hens carry Salmonella today compared to previous decades, the risk remains.
Fresh produce: Fruits and vegetables can become contaminated when irrigated with contaminated water or washed during processing. Cross-contamination in home kitchens also poses risks when raw meat juices contact fresh produce.
Unpasteurized products: Raw milk and dairy products that haven’t undergone pasteurization can carry Salmonella. The pasteurization process effectively kills harmful bacteria, including Salmonella.
Beyond food: other transmission routes
Direct contact with animals presents another significant risk. Many pets, including reptiles, amphibians, birds, and even cats and dogs, can carry Salmonella without showing any signs of illness. These animals can shed bacteria in their stool and saliva, spreading it throughout home environments through shared litter boxes, food bowls, or when roaming on kitchen surfaces.
Person-to-person transmission occurs when infected individuals, particularly food handlers, don’t wash their hands properly after using the bathroom or changing diapers.
Recognizing the symptoms
Salmonellosis symptoms typically appear between 6 hours and 6 days after exposure, though the incubation period can sometimes extend up to two weeks following low-dose exposure. The most common symptoms include:
Digestive symptoms: Diarrhea (which may be bloody), abdominal cramps, nausea, and vomiting are the hallmark signs. These symptoms can range from mild discomfort to severe distress.
Systemic symptoms: Fever, chills, and headache often accompany the digestive issues. The combination of these symptoms frequently leads people to mistake salmonellosis for stomach flu.
Most healthy individuals recover within 4 to 7 days without requiring antibiotic treatment. However, diarrhea may persist for up to 10 days, and bowel habits may take several months to return to normal.
Who faces the greatest risk?
While anyone can contract salmonellosis, certain populations are more vulnerable to severe infections and complications. Children younger than 5 years, especially infants under 1 year, face heightened risks due to developing immune systems. The elderly, particularly adults 65 and older, also experience more severe symptoms.
People with weakened immune systems from conditions such as HIV/AIDS, cancer treatments, or organ transplants require extra vigilance. Those taking certain medications, including antacids and antibiotics, may be more susceptible because these drugs can alter stomach acid levels or disrupt the gut’s protective bacteria.
Dangerous complications
Dehydration: Severe diarrhea can lead to dangerous fluid loss, especially in children and the elderly. Warning signs include dark urine, decreased urination, dry mouth, sunken eyes, and increased fatigue or confusion.
Bacteremia: In rare cases, Salmonella enters the bloodstream and spreads to other body tissues. This can result in meningitis, endocarditis, or bone infections that require immediate medical intervention.
Reactive arthritis: Some individuals develop joint pain, eye irritation, and painful urination weeks after recovering from the initial infection.
Prevention strategies that work
Preventing salmonellosis requires consistent attention to food safety principles. The foundation rests on four key practices: clean, separate, cook, and chill.
Maintaining cleanliness
Handwashing serves as the first line of defense. Wash hands with soap and water for at least 20 seconds before and after handling food, after using the bathroom, changing diapers, touching pets, or handling raw meat.
Kitchen surfaces, cutting boards, and utensils must be cleaned with hot, soapy water after each use, particularly after contact with raw meat, poultry, or seafood. Consider using separate cutting boards for raw meats and fresh produce to prevent cross-contamination.
Proper cooking temperatures
Cooking food to safe internal temperatures kills Salmonella bacteria. Use a food thermometer to verify these minimum temperatures:
Poultry: Cook chicken, turkey, and ground poultry to 165°F. This applies to whole birds, parts, and ground products.
Ground meats: Beef, pork, lamb, and veal should reach 160°F throughout.
Whole cuts of meat: Steaks, chops, and roasts require 145°F, followed by a 3-minute rest period before carving or eating.
Egg dishes: Cook eggs until both yolk and white are firm. Egg dishes without meat should reach 160°F, while those containing meat or poultry need 165°F.
Fish: Cook to 145°F or until the flesh is opaque and separates easily with a fork.
Temperature control and storage
Bacteria thrive in the “danger zone” between 40°F and 140°F. Keep your refrigerator at 40°F or below and never leave perishable foods at room temperature for more than 2 hours (1 hour if temperatures exceed 90°F).
Store raw meat, poultry, and seafood separate from other foods in your refrigerator. Place them on the bottom shelf in containers to prevent juices from dripping onto other items. Transfer leftovers to shallow containers for rapid cooling and refrigerate within 2 hours of cooking.
Thaw frozen foods safely in the refrigerator, under cold running water, or in the microwave-never at room temperature.
Handling eggs safely
Purchase eggs from stores that keep them refrigerated. Discard any cracked eggs and store the rest in their original carton in the coldest part of your refrigerator. Consider using pasteurized eggs for recipes requiring raw or lightly cooked eggs, such as hollandaise sauce, Caesar dressing, or homemade mayonnaise.
Safe interactions with animals
Pet ownership requires additional precautions. After touching animals, their habitats, food bowls, or waste, wash hands thoroughly. Keep pets out of kitchen areas and off countertops. Clean and disinfect pet food and water bowls regularly, and avoid feeding pets raw meat products.
At petting zoos, farms, and fairs, supervise children closely and ensure everyone washes hands immediately after animal contact, even if they didn’t directly touch the animals.
When to seek medical attention
Most people recover without medical treatment, but certain situations require professional care. Contact a healthcare provider if illness lasts more than a few days, causes high fever or bloody stools, or shows signs of dehydration. Infants, young children, older adults, and immunocompromised individuals should receive medical evaluation promptly if symptoms develop.
Understanding salmonellosis empowers you to protect yourself and others from this common but preventable infection. Simple practices like proper handwashing, cooking foods to safe temperatures, and maintaining clean food preparation areas create powerful barriers against bacterial contamination. By implementing these strategies consistently, you significantly reduce the risk of foodborne illness in your home and community.
